I felt pretty lethargic today. That could have to do with the fact that my children woke me up all night long, though.
Breakfast:
Sauteed some red onion, kale, and zucchini in ghee, then dug little nests into the veggies and cracked my eggs inside the nests. Added a little water to the pan and put the lid on to poach the eggs. Pretty good!
Lunch:
Leftovers from last night’s dinner.
Snack:
“Orange Julius”: blend a whole orange, half a banana, coconut milk, a spoonful of coconut oil, vanilla, spoonful of chia seeds, and ice. Also had a handful of almonds. Yum!
Dinner:
I had some homemade bone broth to use up, so I figured soup would be a good solution. I just threw in what sounded good: one onion, carrots, celery, kale, zucchini, italian sausage (just added my own spices to regular ground pork), and then half a jar of crushed tomatoes. Really really good! I never get tired of soup.
