{Whole30} Day 6

Today I think I noticed some of the increased energy that people talk about on Whole 30. I didn’t have a particularly great night of sleep, but looking back on the day I see that I was pretty focused and motivated. I got more done around the house than I have in weeks! And I spontaneously and efficiently reorganized and cleaned out my pantry. That is a job that would usually feel so daunting and overwhelming that I would (and have) put it off for way too long. But I had about a 20 minute window of time where Bret took the kids with him to drop something off at his parents’ house. I was supposed to be getting dinner ready, but once I went to reach for an ingredient, I was (as usual) struck by what a mess my pantry is and ended up attacking it and getting it taken care of. Yes!

Sunday morning breakfast = more time to prepare food since Bret is around. Bret took Parks with him on a drive, so Hollis and I had plenty of time to do some food prep. We made a super yummy frittata: leeks, asparagus, green pepper, and kale. Also, I found some bacon at Costco yesterday that doesn’t have sweetener in it! It’s not organic or anything, but I’m feeling desperate. Well, unfortunately, it’s not so good. It’s the “low sodium” bacon, and sugar free, as I mentioned, and I guess that therefore = no flavor. It just tasted like crispy grease. Also, it’s a much thinner slice than what I’m used to, so that made it even worse. I think I want to try messing around with adding some flavor to it? Maybe marinate it in some coconut aminos for a bit?? No idea how that will turn out, but I’m determined to have bacon, so I must find a solution!

The kids’ nap time actually overlapped a bit, so I had some more time to get some food prep done. I made mayo, and from there made tuna salad (loosely adapted from this Pioneer Woman recipe). Threw it on top of a big bowl of lettuce and then added some avocado and balsamic vinegar on top = SO good! Loved it. And so glad I made a huge batch so that I can continue to eat it for lunch this week! Also, funny story: After I had my lunch, the kids woke up and so I made a little tuna melt sandwich for them to share. I was feeding little bites to Parks, and I pinched a little piece of the crust off his bite (so that it wasn’t such a big bite) and then I put it in my mouth! I probably chewed about three times before I realized what I had done. I immediately spit it out and had to laugh. Old habits die hard, I guess.

I was able to prep these veggies during nap time, so this dinner came together super fast. So so so good. I will make this again for sure, whether I’m doing Whole 30 or not! General Tso’s Cashew Chicken and broccoli on the side. Also, a note on the General Tso’s chicken: I added leeks, peas, red pepper, and mushrooms to it. It was so tasty and I think any combo of additional veggies would be great!

I’ll leave you with a pic of my sweet little Bubs (Parks). He’s finally turned the corner and is getting better. He also spent alot of time on the floor today, just rolling around and playing with toys while laying on his back. So glad to see my little sweetheart feeling better.

I can’t believe that after tomorrow I will have completed one week! Surprisingly, it really hasn’t been that hard so far! *knocks on wood*
